Slow Cook Instant Pot Beef Round Roast

Instant Pot Roast Beef Commercial
With only 5 ingredients it's hard to believe that this dish could be so tasty but it really is! Greg was licking up the gravy out of the Instant Pot!
It's kind of a funny name–Roast Beef Commercial. Where does it come from? The commercial sandwich is super popular in Minnesota and in the Midwest. In other places it's sometimes called a hot beef sandwich. One theory of where the sandwich got its name is that the sandwich is named after the people who ate it. Traveling salesmen were once known as "commercial travelers." Often traveling by train, they needed something fast and filling before the train left the station. Bread, meat, potatoes and gravy are quick to assemble, and even quicker to eat.
What ingredients do I need?
- Beef broth–or water and Better than Bouillon Beef Base
- Beef chuck roast or top round steak–sometimes labeled as london broil. You can also use a rump roast.
- Salt and pepper–for seasoning. I like kosher salt and freshly cracked pepper.
- Cornstarch–for thickening the gravy. You can also thicken with arrowroot or flour.
- White bread–I like using the thick Texas toast bread.
Instructions
Instant Pot Instructions:
- Add ingredients: Pour broth into Instant Pot. Add beef into Instant Pot. Salt and pepper the beef to taste. If you'd like to add more color and flavor your can sear the meat in a little oil before pressure cooking by using the saute setting.
- Pressure cook: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 60 minutes for a chuck roast or 30 minutes for london broil. When time is up let the pot sit for at least 15 minutes then move valve to venting. Remove the lid.
- Move the meat to a cutting board.
- Thicken gravy: In a small bowl stir together cornstarch with equal parts water until smooth. Turn Instant Pot to saute and add in the cornstarch slurry until gravy has thickened. Salt and pepper the gravy to taste or if needed add in a little better than bouillon beef base.
- Toast the bread.
- Shred the beef.
- Plate: Scoop some beef on top of a piece of toast, top with another pieces of toast. Cut into triangles and then drizzle the sandwich with gravy.
- Eat and enjoy!
Slow Cooker Instructions:
- Add ingredients: Pour broth into slow cooker. Add beef into slow cooker. Salt and pepper the beef to taste.
- Slow cook: Cover and cook on low for 8-10 hours for chuck roast or 4-5 hours for london broil.
- Move the meat to a cutting board.
- Thicken gravy: In a small bowl stir together cornstarch with equal parts water until smooth. Turn slow cooker to high and add in the cornstarch slurry and stir. Let thicken without lid for 10-15 minutes. Salt and pepper the gravy to taste or if needed add in a little better than bouillon beef base.
- Toast the bread.
- Shred the beef.
- Plate: Scoop some beef on top of a piece of toast, top with another pieces of toast. Cut into triangles and then drizzle the sandwich with gravy.
- Eat and enjoy!
Can you make potatoes at the same time?
Yes you can. Place a tall trivet into the Instant Pot. Arrange the meat so that the legs of the trivet can be on the bottom of the pot. Place a pan with cubed potatoes covered with water on top of the trivet. Cover the pan. The potatoes will boil at the same time that the meat cooks. Then you can drain the potatoes and mash them in a bowl with butter, milk and salt and pepper.
What kinds of beef can you use?
Find a chuck roast or rump roast at the grocery store. Or you can use a leaner cut of beef like top round (often called london broil). You will notice in the recipe card different cooking times for the different cuts of beef.
How do I shred the meat?
To shred meat, place two dinner forks, with their backs facing each other, adjacent to each other in a portion of the meat. Pull the forks in opposite directions, breaking up the meat into shards as you pull. Discard any bits of gristle or fat remaining in the shredded meat. Repeat until all your meat is shredded.
What equipment do I need?
- 6 or 8 quart Instant Pot*
- If you're making potatoes you'll need a tall trivet* and a pot in pot dish*
- Cutting board to shred the meat*
- I love this little whisk* to stir the cornstarch slurry into the gravy

- 8–12 slices white bread
